Chefs on Parade (COP): Bigger, Grander, Tastier!

The Hotel and Restaurant Association of the Philippines (HRAP) brings back Chefs on Parade (COP), the Philippines’ longest running culinary competition, on February 10, 11 and 12 at the SMX Convention Center. COP’s return has gotten the Filipino food industry celebrating. Restaurants and hotels are already choosing who among their chefs will be fielded. HRM colleges and culinary schools are signing up to join; their students busy with research and training for D-day. Foodies have hailed COP’s comeback as the answer to the community’s craving for a sumptuous gastronomic experience.

“Chefs on Parade is a prestigious event,” affirms Christopher Park, General Manager of the Manila Pavilion Hotel and Vice-Chair of the COP Competitions and Judging Committee. “It is recognized as the first national culinary competition in the Philippines and the only culinary event organized by the official association of the industry, the HRAP.”
Mother of all culinary events
The COP began in 1974 as a simple food display. Held for only a day at the Sea Breeze Hotel in Bacolod, it attracted a modest audience. But thanks to the efforts of organizers, most especially the chairpersons, COP grew in scope and support. “It is considered to be the mother of all culinary events in the country,” says HRAP Board Director JM Tanalgo who is also the head of the COP 2011 Ways and Means Committee.

Tanalgo further states that the COP is an HRAP creation. “The term ‘Chefs on Parade’ was made popular by HRAP and the association even owns the trademark and registration of COP.”

As the event became more popular, it attracted more participants and bigger crowds. From hotels, the COP was housed in big venues like the Philippine International Convention Center (PICC), World Trade Center and the Intramuros Clamshell Pavilion.

The competition was held yearly from 1979 to 1998. It was then held every two years from 2000 to 2004. It stopped after 2004 due to financial constraints and the country’s challenging economic situation.
Back by popular demand
That is, until the intercession of the current HRAP who noted that new developments called for the COP’s return.

Richard Masselin, COP 2011 Over-all Chairman, explains: “Food has taken center stage in the lifestyle of a large and growing consumer base. Restaurants and food concepts are flourishing like never before and finally, on the human resources front, the country has thousands of young individuals undertaking college degrees, courses in culinary and or Hotel and Restaurant Management. … With established and new talents eager to showcase, compete and certainly celebrate, the COP will be a great platform for all of us to share our passion amongst professionals and also with our Public.”

He sums up the decision to mount the COP again as a “moral consideration.” Masselin says, “It was a response to requests from the community and the supporters of the HRAP as the industry and partners were urging us to revive the COP.”

The greatest cooking show
However, the current group of organizers realized that if they were going to do so, the event cannot simply be a revival; the COP would have to be on a grander scale and at par with global standards. Masselin says, “We set one condition… make it the greatest culinary event in the country!”

To this end, the HRAP prioritized raising the necessary funds. “The financial aspect of the operation was rationalized early… We have decided to form several partnerships to meet our financial requirements. As of to-date, we are well on our target,” says Masselin. “COP requires a massive amount of work and organization as well as for the logistic. We have a dedicated team on board with a lot of things to do until February 2011 but we are moving forward.”

Based on the venue and the line-up of activities, alone, Chefs on Parade 2011 is set to be the biggest in its history. Halls 1, 2, 3 and 4 of the SMX Convention Center will be utilized for three full days. “So that is about 9,000 ++ square meters of culinary experience,” says Tanalgo.

More than food
Aside from the culinary contests, there will also be several free cooking demonstrations form known chefs, a book launch and several free workshops from industry experts. Two of the biggest highlights will be the presentation of the Larry J. Cruz Culinary Award to an individual who has made a great contribution to the food industry, and an ASEAN & Filipino Culinary Journey featuring historical cuisine and savory dishes from the Southeast Asian countries.
All these will be open to the public. The HRAP assures that the entrance fee and the tickets will be at popular prices.

Wendy’s Greenbelt reopens with a new look

Jason John W.S. Lim, newly appointed president of Wenphil Corp. (the Philippine franchisee of Wendy’s International), said Wendy’s International has seen the wisdom of creating a more "modern and clean feel" to their stores as a way of attracting a more diverse clientele, specifically from among the younger market aged 16 and up. The company decided to renovate its stores starting this year and to date, he said the company has spent P200 million to renovate 18 of its current 30 stores. Mr. Lim said Wendy’s has allotted another P150 million for the face-lift of the remaining 12 stores next year.

Wendy’s Greenbelt was the fourth Wendy’s branch in the country. It opened in October 1986. It was first renovated in April 1991, and then in June 2004. The store was renovated earlier this year, and was closed for 45 days until its soft reopening last month.

As Wendy’s improves on the look of all its stores, Mr. Lim said the company is also gearing up to aggressively expand next year. He said Wendy’s plans to open at least 15 new stores, mostly in the provinces like Cebu and Davao. "We feel it’s the best time for Wendy’s to change and keep up with the competition," Mr. Lim said.

Recently, Wendy’s introduced its biggest burger to date -- the Baconator Mexican Melt. It boasts of two 100% beef patties weighing a quarter of a pound each, combined with six strips of smoked bacon, and one generous slice of American cheese before it gets topped with cheese sauce, and sliced Jalapeño peppers. It is served on warm kaiser buns.

For the more health conscious, Wendy’s will soon offer shrimp fritters to complement the restaurant’s very popular shrimp sandwich, and its wide variety of salads.

Sabroso Lechon

"Now you know why.." was what fellow food blogger Leira's said when we finally trooped to Sabroso Lechon located at E. Rodriguez Ave., Corner Tomas Morato, Quezon City.

We reside in Quezon City and frequent passing E. Rodriguez and have noticed Sabroso but we thought they just sell lechon by order, whole, by the kilo, etc. Lo and behold they also serve it dine in with rice and soup!

Pistachio Kulfi P125 - a flavored frozen dessert made from milk which originated in India similar to ice cream in taste, texture and preparation; takes longer to melt than ice cream; a fitting dessert to after a spicy meal with its creamy consistency and nutty pistachio bits - heaven!

Masala Chai P80 -"spiced tea"; beverage from the Indian subcontinent made by brewing tea with a mixture of aromatic Indian spices and herbs; a perfect alternative to coffee

Namaste Authentic Indian Cuisine Part 1 (Lassi, Kebab, Pullow and Masala)

Their interior is very sleek and modern but with touches of Indian culture particularly with their interesting wall decors. I fancy the subtle details of their napkin holders, sugar and cream container and water glass tray (3rd and 4th photos above) all silver and with intricate designs. A table for four or eight are available ergonomically spaced and very comfortable. The ambience is laid back, enjoying good food while watching the latest Indian music videos on their telly. They are available for private functions it and can fit approximately 30-50 people easily. Oh and as stated above they are Halal-certified and vegetarian friendly.

Namaste is a common spoken greeting or salutation which simply means "I bow to you", accompanied by a slight bow made with hands pressed together, palms touching and fingers pointed upwards, in front of the chest. A few weeks ago the privilege to feast on authentic Indian and Halal certified food here in the Metro is now noted as a remarkable gustatory experience!

Strawberry (Sweet) Lassi P80 - is a popular and traditional Punjabi yogurt-based drink of India and Pakistan; this is sweet lassi, blended with sugar or fruits (strawberry) instead of spices; served refreshingly cold; also great to cleanse one's palate after a spicy dish

Chicken Seekh Kebab P140 - chicken mixed with traditional herbs and seasonings; served sans skewers

Fish Tikka P200 - fish coated in Tikka paste and then grilled/barbecued

Golden Cauliflower P160 - yellow cauliflower deep fried until it turns to a golden crisp; surprisingly not oily due to Namaste's technique and a best bet for vegetarians; yellow cauliflower tastes almost the same as white cauliflower but definitely looks more enticing

Glossary of Terms:

*Sweet lassi - a form of lassi flavored with sugar, rosewater and/or lemon, strawberry or other fruit juices

*Kebab - the traditional meat for kebab is lamb, but depending on local tastes and taboos, it may now be beef, goat, chicken, pork; fish and seafood; or even vegetarian foods like tofu; served on the skewer or döner kebab served wrapped in bread with a salad and a dressing

*Tikka - a piece of meat, such as a cutlet, and the popular dish chicken tikka is made of chicken cutlets in a marinade; made from a mixture of aromatic spices and dahi (the Indian word for plain yoghurt)

*Pullow - (Basmati- a variety of long grain rice grown in India and Pakistan, notable for its fragrance and delicate, nuanced flavor); rice cooked with spices and onions

*Reshmi - a traditional Muglai dish prepared in India. It gets its name from the succulence of the meat after prolonged marinating and light braising

*Machi Masala - fish curry cooked in various spices

Panciteria Lido Cocina Tsina: Home of Pugon-Roasted Asado (1936)

What comes to mind when we hear Panciteria? Pancit or Pansit (Chinese pian i sit; "something conveniently cooked fast"; noodles) is a Filipino staple next to rice. Almost every nook and cranny in the Metro has a Panciteria with their own version of this Chinese food tradition. Be it guisado, asado, wanton, etc., served "for long life" at birthdays and almost every occasion. But at Panciteria Lido they offer so much more.

I live in Quezon City and frequently passing E. Rodriguez, I came to notice Panciteria Lido. Anticipated its opening but put off foodie visit until last week and the trip was truly worth it!

Conceived in 1936 by Chinese Chef Lido in Binondo, it started as an eatery serving different noodle dishes Filipinos have grown to love like wanton, guisado, asado all seasoned to fit the Filipino palate.

Chami-special (petit P112.00; mucho P185.oo0)

Noodles made of flour, water and eggs kneaded into long strips sprung in Northern China around AD 100. At Panciteria Lido, their Chami or Chami-special is still the reigning Pancit version specially seasoned to fit the Filipino palate.

Steamed Fish Fillet Soy sauce (P255)

Dory fillet steamed drenched with special soy sauce is delightfully light and melt in your mouth. Non-fish lovers may be converted!

Pugon-Roasted Asado (P267.00 per 1/4 Kilo)

Chef Lido went through lengths of experimentation to perfect this dish 70 years ago! Made of marinated overnight pork loin meticulously roasted in a "Pugon" (brick oven) making it tender but juicy and thereby bringing out a melody of flavors and its signature sweet sauce. A definite must try!

Fried Shrimp Balls (P275.00)

I'm a big fan of shrimp and have tried almost every fried shrimp ball there is in Manila from restaurants to food stalls. Chef Lido's Fried Shrimp Balls are not only bigger in size but every bite is indeed a shrimp-full delight.

Drunken Lechon Macau (P257.00 per 1/4 Kilo)

Another must-try and best seller is their Drunken Lechon Macau. It may look like the Filipino Lechon Kawali but the difference is in the taste. Panciteria Lido has mastered the balance between crunchy and meaty plus its not oily.

Poached Tofu (P105.00)

For vegetarians or a light side dish to accompany any of Panciteria Lido's dishes you might want to try their Poached Tofu. They also have Braised Tofu in Hotpot (P180.00)

Fried Rice (Yangchow P65.00 per cup/ Mucho P185.00; Lido Fried Rice P65.00 per cup/ Mucho P180.00)

Rice is a Filipino staple and at Pancit Lido's you may choose from Yangchow Fried Rice or Lido's Fried Rice be it solo for a cup or mucho good for (2-3 persons)

Hot Belgian Chocolate

To cap your fully satisfying meal the unconventional dessert way, try their Belgian Hot Chocolate. Which is for me the best Hot Chocolate I've tasted in the Metro! Belgian chocolate in its finest form and every sip engulfs you with an overwhelming rich taste. Best savored slowly as an alternative to their signature beverages Iced coffee and their must-try Syphon-filtered Coffee.

Syphon-filtered Coffee

Introduced and has been a favorite since 1994, this delectable coffee is made with Panciteria Lido's special bean blend brewed using a 100-year old method, "syphon" or "siphon" wherein a tube running from the liquid in a vessel to a lower level outside the vessel causes an atmospheric pressure which forces the liquid through the tube.
